Brick Grilled Cheese

Ingredients

  • 2 green onions, using only the green ends, not the whole scallion.
  • 1 tbsp Dijon mustard
  • 3 tbsp mayonnaise
  • 4 slices thick sliced toast (rye, sourdough, etc)
  • 2 tbsp butter, softened.
  • 4 oz Buholzer Brothers Brick cheese, sliced.

Directions

  1. Combine the green onions, Dijon mustard and mayonnaise, stirring or blending to mix completely.
  2. Spread ½ tbsp of butter on one side of each piece of bread.
  3. Heat a skillet over medium low heat (preparing with melted butter or non-stick cooking spray). Place two slices of bread in the skillet with the butter side down. Top each piece of bread with 2 oz of sliced Brick cheese.
  4. On remaining bread, spread 1 tbsp Dijon mayo mixture on the side opposite as butter. Place on top of cheese with butter-side up.
  5. Cook slowly until the bread is a rich golden brown and the cheese is melted, flipping once to cook other side. Remove from heat, cut, and serve.
